Taco Bell Quesadillas

I haven't posted a recipe in quite some time. Not quite sure why but I think I'm a tad busy. But not too busy to not share this great recipe! I don't know a family that doesn't love Mexican food. I have two favorite recipe sites that I frequent often: www.recipezaar.com (you can become a member and add your own recipes, as well as rate others) and www.pioneerwoman.com. This is a big favorite on Recipe Zaar. (Ignore all the hyperlinks-having issues removing them.)

Taco Bell Quesadillas

SAUCE:
1/4 cup mayonnaise
2 teaspoons minced jalapenos, slices
2 teaspoons jalapeno juice, from minced jalepenos
3/4 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon garlic powder
1 dash salt

QUESADILLAS:
4 flour tortillas
4 chicken tenderloins
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 slices process American cheese

DIRECTIONS:
1 Combine sauce ingredients and stir until smooth.
2 Grill chicken in vegetable oil and cut into thin slices.
3 Preheat skillet over medium heat.
4 One at a time, lay tortilla into hot skillet and sprinkle with 1/4 cup of each shredded cheese and 1/2 cheese slice on one side of the tortilla.
5 Arrange about 1/4 cup chicken slices over tortilla on the same half covered with cheese.
6 On the empty side, spread about one tablespoon of sauce.
7 Fold over, and press gently with spatula.
8 Cook until cheese is melted and slice each into 4 pieces.

In my last post, I told you about our move. But I was sneaky and didn't tell you the really, really big news. Why? Well, we had to make sure everything was safe and okay. Most of you know already, but I'm pregnant! Ella is going to be a big sister! I'm due at the end of September and we're just thrilled!

When I was pregnant with Ella, I had this great little website that kept everyone up to speed on doctor's appointments and ultrasound pics, but this time I've decided to put updates and pics on here (to keep it simple).

I want to be able to look back and remember this time. My pregnancy journal of Ella is printed and bound so I can read back at the ups and downs of when I was pregnant with her and I enjoy that so much. It's important to remember and how neat will it be when she can read about that? I've been slacking on scrapbooking, but I will atleast have this. And I keep a regular journal as well of all the funny stories that I need to remember. I'll share one here. A few weeks ago, Ella was helping me do her laundry. I always try to encourage this because we all know this won't last long. I never knew there was an orange crayon in the mix. The clothes were washed. She then wanted to help load them in the dryer. Once again, Mom missed the orange tint and they were dried. Needless to say it didn't come out in another wash, but after buying some special stuff at Walmart, only one shirt was ruined. Another fact about crayons: when combined with a toilet paper roll, they still are flushable.

Times are a-changin

Hi everyone! It's been a minute since I've posted, but honestly we're just taking things easy since the busy holiday and birthday season. The only real updates I have are: Jason and I still work together, Jason and I are still married (yay!), Ella is growing and looking less like a baby (imagine that), and we're moving! Just 10-15 minutes away, but we'll have more room and the house is adorable. It's got new paint and flooring so it's move-in ready! We move in the first of March and I'll post pictures once we're settled. We're pretty happy about it but dreading the moving. We honestly move every year. Maybe we'll stay here for awhile because when Ella's of school age, she'll have a great school to go to. Which also happens to be the same school where Jason's aunt teaches. :)
