Heard Around the House

The conversations go something like this:

One morning last week, as Jason was waking Ella up...

"Ella...it's time to get up. Mickey Mouse is on." and he starts singing the theme song. Then he finishes.

Ella sighs and says..."that's enough Daddy."

Yesterday, while putting my make-up on in the church parking lot...

"Momma, what are you doing here?"

"I'm going to church, baby. What are you doing here, Ella?"

"I had to get out of the bed."

There are more, but I can't remember them right now...

Fruit Pizza--a marvelous summer dessert!

I made this for a cookout for my Mom on Mother's Day and it was a HUGE hit! It's light enough to enjoy in this soon-to-be hot weather. The sugar cookie crust is the key for me, but I'm a big cookie lover. Jason doesn't like coconut so I used 1 Tablespoon, but definitely use some just to give the "sauce" (cream cheese and cool whip) some flavor.

The ingredients:

1 refrigerated sugar cookie log
4 ounces, Cream Cheese, softened
2 Tablespoons Coconut rum (or flavoring)
8 ounces, Cool Whip
1 cup Sliced Strawberries
2 whole Kiwis, Sliced
¾ cups Blueberries
1 whole Banana, Sliced

What to do:

Preheat oven to 350 degrees (or whatever temperature the dough calls for).
Let the dough come to room temperature, and press it into a cookie sheet. Make sure it is thin. Bake for about 10 minutes, rotate pan, then bake for another 5 mintues. The baking time will all depend on how cold the dough was and your own oven, so watch carefully. Do not overbake!
One cookie has cooled, beat cream cheese, coconut flavoring and Cool Whip with a hand mixer. Spread on the cookie crust.

Top with the fruit and refrigerate. I used just kiwis and strawberries and it was great, but you can add whatever you want. If you use bananas, add them right before serving. ENJOY!
