House Progress

Hey there! So you guys desperately need a house update. So much has been going on and things are moving very quickly. In example, one week ago we still had just a foundation. Fast forward two days and you're talking a frame, including the interior walls, ceiling, and trusses. Fast forward a couple of more days (okay, I lost track!) and the roof has been prepared for shingles, the arched doorways have been started, and most of the fireplace has been inserted. When people say "It'll go fast once the foundation has been poured," believe them. Believe every word. I cannot wait to get in our new home. More importantly, we feel so overwhelmed still by God's love. He has always taken care of us, even when things have not been going so well.  He has brought us so far in two years. There is no way to explain how we feel unless you've walked in our shoes. So, just take my word for it. :-)

A whole slew of beginning to now house pics are on Facebook. All of you who follow me here can see those on there. Can you tell I'm getting lazy with uploading pics? I did manage to find a picture of what the house will look like when it's completed. Of course, brick color will vary and maybe shutter color and maybe also the shaker color (above the garage). But, it'll give you a general idea.

I hope my next update is about asking for moving help!

Today I Will Make a Difference

Today I will make a difference. I will begin by controlling my thoughts. A person is the product of his thoughts. I want to be happy and hopeful. Therefore, I will have thoughts that are happy and hopeful. I refuse to be victimized by my circumstances. I will not let petty inconveniences such as stoplights, long lines, and traffic jams be my masters. I will avoid negativism and gossip. Optimism will be my companion, and victory will be my hallmark. Today I will make a difference.

I will be grateful for the twenty-four hours that are before me. Time is a precious commodity. I refuse to allow what little time I have to be contaminated by self-pity, anxiety, or boredom. I will face this day with the joy of a child and the courage of a giant. I will drink each minute as though it is my last. When tomorrow comes, today will be gone forever. While it is here, I will use it for loving and giving. Today I will make a difference.

I will not let past failures haunt me. Even though my life is scarred with mistakes, I refuse to rummage through my trash heap of failures. I will admit them. I will correct them. I will press on. Victoriously. No failure is fatal. It’s OK to stumble… . I will get up. It’s OK to fail… . I will rise again. Today I will make a difference.

I will spend time with those I love. My spouse, my children, my family. A man can own the world but be poor for the lack of love. A man can own nothing and yet be wealthy in relationships. Today I will spend at least five minutes with the significant people in my world. Five quality minutes of talking or hugging or thanking or listening. Five undiluted minutes with my mate, children, and friends.
Today I will make a difference.

OUR House!

Before I can show you a picture of the floor plan of our new home, I have to give you back history. Why? Beacuse that's what I do and it just makes the whole process even more wonderful. Before Ella was born, Jason was working at Waffle House. He hated everything about it. He knew he wanted to spend more time at home with us when Ella was born.  He joined Charis Mortgage. He loved the idea of helping people get into their new homes and the overall process. But he hired on at the worst possible time in the mortgage/housing industry.  He closed two loans in eight months.  Needless to say, times were very, very hard for us. I've been blessed to have a steady job that I enjoy and at that time I also picked up a part time job to help out while Jason was working and job hunting (yet again). Ella was under a year old when we left our rented home in the Five Points area, swallowed our pride, and moved in with my parents for about three months. My parents are wonderful and supportive, but even so, it was incredibly tough on us.  Then, our prayers were answered. Jason was hired on with my company! He worked normal hours and was off weekends and holidays...something he never got while at Waffle House. We were just overwhelmed by God's love and grace. We rented again and then moved February 2010 and have been there ever since.

We often think back at that point of moving in with my parents. That was as financially low as we had ever been and we were just heartbroken. We grew from that. We grew stronger as a couple, as a family and financially as well. And now, about 3 years later, this is where we are! Praise the Lord! He has been so good to us and we don't deserve any of it.

So, now, after my novel, you can see the floor plan. Now you understand that even though this isn't a mansion or even a large home compared to most, it's so much more than that to us. It's a tangible item God has blessed us with. We have just felt overwhelmed by His love and we can't thank Him enough. I have "real" pictures that I'll post here soon of the model home we saw in Madison.

Craft Update

Back in my March post regarding steak recipes, I threw in a few craft ideas. See how scatterbrained I am? Please don't respond. Anywho, I did get around to making that no sew tutu for Kaylynn's 4th birthday party and how fitting that it was a Pinkalicious party? I don't have pictures but this cost $10 to make and took about 45 minutes, but I think you could do it quicker. It does take time to cut out 6 yards of tulle though. I had also mentioned wanting to make a jewelry display out of wire and a picture frame. I still like that idea but just haven't had the time to do it. So, I think it's still in the works for sometime in the future.  I was still thinking about my jewelry conundrum when I ran across this Pottery Barn steal yesterday.



Not only was it super cheap, but they offered free shipping. My total was only $10.54! I sure love a good bargain.

A Hunting We Will Go

Hi everyone! So, it's been awhile since I posted about us. Let's see, Easter was fun. Ella is at a wonderful age and egg hunting was just thrilling for her. We are still working on mastering the potty. Heck, just sitting on the potty would be nice! She is growing taller and bigger everyday. It really is nothing short of amazing.

Work is, um...work. :-) We're blessed to have jobs and blessed that we enjoy them.  Jason is hoping to start school this fall and get our master plan started (cue meniacal laughter). We've also just recently start house hunting. Let me tell ya....it's interesting.  We need and want to stay in the same area (Mountain Cove). For our area and price range, it's slim pickings. So, we might build. We might not. Just pray, okay? We'll need it either way. Ha!

At the beginning of this year, I started a year long reading plan through the Bible. And it has been so much more than I would've thought. I read a few chapters each night on my Kindle (my favorite thing--I'll have to post about that later) and it's amazing what I get out of it. I highly recommend doing it if you never have. There are plenty of resources and you can pick a plan that's right for you.

And we were very, very blessed to have survived the past tornados.  Talk about eventful for the state of Alabama, but not in a good way.  We had no damage and no injuries. Same story for our extended family. We have been counting our blessings so much lately. God has given us much and we just have to say thank you!

On the Menu: Chicken Tortilla Soup

As promised, here's the soup recipe you can make from your leftover chicken tacos (below).  I need a meal to be easy, quick, and filling for it to be a keeper in the Kendrick house.

The ingredients:
approximately 1 cup of leftover chicken taco meat (I used about 2 cups...it's what I had leftover)1 32. oz box of chicken broth
1 can of Mild Ro-Tel
1 can of corn
2 tablespoons fresh chopped cilantro
1 tablespoon lime juice

What to do:
Dump everything in a pot and simmer for about 30 minutes. Garnish with crumbled tortilla chips and shredded cheese. So flavorful and yummy! The lime gives it a little tang and enough to cut through some of the heat. So yummy that I ate two bowls.

On the menu: Chicken Tacos

Hey everyone! Aren't you glad spring is here? I am so ready for capris and flip flops. 

Last night, we had Beth (hi!) over for a belated birthday dinner and I made these chicken tacos. We had fun hanging out and talking. The tacos were so easy, flavorful and yummy.  Make these soon  into soft tacos or top them on your salad or make nachos.  Yummy!

The ingredients:
6 boneless, skinless chicken breasts
16 ounces salsa
1 package of taco seasoning (you could use the low sodium version)

Okay...3 ingredients. It doesn't get much easier than that!

What to do:
In a crockpot, mix all the ingredients, making sure to coat the chicken well.  Cook on low for 8 hours.  When finished, it will shred easily.

Reserve a cup or more of the chicken and I'll post about how to make tortilla soup.  I just have to make sure it's yummy worthy to post here first. :-)

On the Menu: STEAK!

I've decided to be nicer to the man I'm married to.  I like him. A lot. And I think he deserves a big chunk of steak pretty often. This is how to make your man fall in love with you all over again.  I haven't made these yet, but they are tried and true and I got them from my favorite food blog.

On a side note, I have two crafty ideas I want to do soon and then share here. One is a simple tutu for Ella. The other is a jewelry organizer. Since my necklaces equal one big wad of metal, I need some help. Fast. 

This one is from Etsy. I don't know where I could find the container to start the project and not sure if Hobby Lobby or Michael's would have something. Ideas?

And this one is wire strung across an empty picture frame. You could use this chicken wire type stuff or I was thinking just wires strung horizontally. Not sure yet. Either way, I'll post it here and let you know how they turn out.

The Morning Chart

I don't think I've ever blogged about this, yet it affects me daily.  Ella is her Daddy in little girl form.  Neither one of them are morning people.  For me, being the only one in our house that is, it is completely frustrating.  It seems like every morning is at snail speed.  I dread what pre-school mornings will be like next January.  But let's not talk about that until closer to time. I'm not ready to "deal" with it yet. My baby is still my baby! That's my mantra.

Since Ella is Miss Independent, I thought I would work with that. Today, I had an idea. I created a morning chart for her consisting of only pictures. She can color it and hang it up.  The goal is for her to follow the morning chart and, hopefully, accomplish it on her own. Fingers crossed! If this doesn't work, I'll be heading to Facebook for ideas. I can't be the only one with a sleepy head in the mornings.

On the Menu: Super Bowl Wings

Let's just make this clear. I don't watch professional football. I don't watch the Super Bowl. I don't get involved in all the hype. But...I do get involved in two things: food and commercials.  Since I will more than likely have hungry men at my house that Sunday, I've got to prepare. I made these wings this week and, although Jason was skeptical, he cleaned his plate. They're a great sweet heat blend.

I found this recipe for Raspberry Jalapeno Wings on Tasty Kitchen

The ingredients:

  • 20 whole Chicken Mini Drummettes -or- about 2 pounds of wings
  • 1 cup Seedless Raspberry Jam
  • 1 Tablespoon Honey
  • 4 ounces Can Diced Jalapenos
  • 4 Tablespoons Butter (1/2 Stick)
  • 1 Tablespoon Worcerstershire Sauce
What to do:

Preheat the oven to 400 degrees.  In a small saucepan, combine the raspberry jam, honey, and jalapenos over medium-high heat and bring to a boil.  Turn down to simmer while you get the wings ready.

Get a large pot and melt the butter and Worcerstershire sauce (I can never pronouce that correctly so I just call it W. sauce...lol) on high heat (actually just the setting below the highest you have...mine is 8). Using tongs, put in half of your wings and saute for 5 minutes. You want to make sure they get evenly coated in the butter mixture. Move them to a large bowl and repeat the process for the other wings.

Pour the raspberry sauce over the wings and coat. Line a large pan with foil (you'll thank me later when you aren't scrubbing sticky sauce off your nice pan) and cook for 35 minutes, turning halfway through cooking.  Let them sit 15 minutes after removing them from the oven and the sauce gets thicker and more wonderful.

Note: I don't like spicy hot food, but this has enough heat to make your mouth warm and the raspberry complements it well.

Kid Craft: Homemade Bird Feeders

Last week, we were cooped up in the house for days.  On day one, I normally clean, do laundry, organize, etc.  Then day two hits and I read or watch movies.  Two days is all I can stand. By day three, I want out.  And so does Jason and Ella. Luckily, I remembered this craft from a Special Agent Oso episode. No joke! Ella had a lot of fun making these and the birds enjoyed not having to find food under 4 inches of snow. We have two gorgeous cardinals that frequent the house and I want to keep them coming back.

This is so easy. You don't have to be Martha Stewart to pull it off.

You'll need:
pine cones
twine, yarn, etc. (I used leftover Christmas string)
hot glue
peanut butter
bird seed (You can get a large bag at the Dollar Store for around $4)

Cut enough string for your liking, double it up and hot glue it to the pine cone. Let it cool. Using a butter knife, let your kid heavily smear PB all over the pine cone.  Roll the pine cone in bird seed.  I used a throw away pie pan to hold the bird seed. Hang it up outside!

On the Menu: Warm Spinach and Artichoke Dip

I made this just this past Saturday for Ella's birthday party. I think it made people nervous because it didn't disappear like the cheese dip, but that's okay because I'm still snacking on it.

Birthday details will be another post with pics. :-)

The ingredients:
12 oz can of artichokes, drained and chopped (but I only use about 6-10 ounces because they tend to be sour)
1 box of frozen spinach, thawed and squeezed of its juices
1 cup mayo
1 cup sour cream
1 cup cubed mozzarella
1/2 cup grated parmesan (and I'm not talking the dried kind...be proactive here and buy some real cheese!)

What to do:
Mix all ingredients in a 13 x 9 dish and bake for 15-20 minutes. This will be enough for 5-6 people.

We weren't just dreaming of a white Christmas....

This Christmas, we got the biggest snow in our area ever recorded.  If you're not from the South, you just don't understand how big of a deal this is. Year after year we talk about how nice it would be to have snow, to be able to sing about it, to put us in the Christmas spirit, to play in it, and the list goes and goes.  Instead of a dusting that I thought we'd get, I woke up, looked out the window and said "Wow" loud enough for Jason to hear me. I was shocked. And thrilled.  And utterly happy.  We got atleast 3 inches at our house. It was beautiful and it really made for a wonderful Christmas.

Of course, we were blessed with presents and Ella had a wonderful, fun time, but even our family lunches and dinners were nice. I think everyone just seemed happier and more in the Christmas spirit this year. We got a lot of it on film and I'm glad we did. We may not see Christmas Day snowball fights for years to come.

On the Menu: Shepherd's Pie

As common as I thought this was, Jason had never heard of this or ate it.  I told him it was meat and potatoes so he agreed to try it. Mom made this while I was growing up and although this isn't her recipe, it's still yummy.  Plus, you get to cheat and buy the steam and mash potatoes. If you haven't tried them yet, please do and don't worry about the guilt of not boiling your own potatoes and wearing your arms out mashing away. You'll still get a little workout here. :-)

For the caramelized onions:
1 Tbl olive oil
1 tsp butter
1 1/4 cup chopped onion
1/2 tsp salt
1/4 cup water

For the filling:
1 Tbl olive oil
1 lb ground beef
1/4 tsp thyme
1/2 tsp pepper
1/2 tsp parsley
1/2 cup beef broth (or as needed)
1 Tbl flour (or as needed)

For the topping:
1 bag of steam and mash potatoes--or--
if you want to be difficult, 3 large potatoes cooked and mashed

What to do:
For onions, heat oil and butter in a large frying pan over medium heat. Add the onion and salt and cook for 5-7 minutes until translucent.  Reduce to low and add water, cover and cook for 5 minutes. Continue to stir. Remove the cover, turn to medium and stir. Continue to cook until the water is gone and onions are brown. Move to a bowl.

Preheat the oven to 400 degrees. Spray a 8x8 dish if you like it thick, but I preferred the 13 x 9.

For the filling, add olive oil to the same pan over medium heat.  Add beef and drain.  Add onions, thyme, pepper, prasely and beef stock.  Add salt to taste.

Add flour, reduce to low for 3-5 minutes.  Add more flour or stock.  This is your gravy.

Put in casserole dish and spread mashed potatoes on top.  Cook for 25 minutes or until bubbly on the sides.

An all in one dish! Yummy!

Thanksgiving Weekend

I hope all of you had a great Thanksgiving.  Jason and I enjoyed our four days off.  We stayed busy but it was a good kind of busy with 3 family get togethers and of course, lots and lots of food.  We still have two leftover plates in the fridge.  I think it'd be a good week for sushi or something equally as opposite of turkey and dressing as you can get.  Ella is at such a fun age right now and I'm trying to soak it in as much as possible.  She got to sleep in all four days and visit with family and eat cookies with Nonnie when she didn't eat any lunch....AKA...she had it made.  She is such a good kid.  We really do feel blessed and she brings such happiness into our lives.  I know it's sappy, but it's true.

We've got a head start on her Christmas presents.  We don't buy her a lot because both of our families do enough of that and we don't want her to expect a truckload of gifts every year.  I've got to start planning her birthday party soon.  I was going to go with a Little Einstein's theme, but she is currently in love with Toy Story 3's Woody and "Fuzz" so I'll ask her and get the verdict.  We've got lots of Christmas activities planned (as usual) and I think this year she'll really enjoy all of the festivities.  I'm really looking forward to the free Polar Express PJ party at the library.  They're even giving out a wrapped copy of the book! I'm a sucker for freebies and good deals.

Halloween 2010

Ella is still talking about Halloween and it's been almost 4 weeks.  She still talks about dressing up as Minnie Mouse, going to Halloween parties, spooky ghosts, and all sorts of things.  We didn't do much door to door trick-or-treating but she had a fabulous time.  I love this age.  She is so busy and is constantly learning new words and forming 6-8 word sentences.  We're working on patience (just ask once...I promise I heard you! Gimme a minute!) and manners at the moment.  Bossiness and demands are thriving. :-)

First Haircut Photos

Ella got her first haircut back in August (click HERE to read about it) and now I finally have some pics to show of it. I think it might be time for another snippet soon.  Mrs. Heather was so impressed with how still Ella sat and how patient she was. I reminded her bribery (especially suckers) will get you everywhere with her. Ella's hair was twice as long on top as the sides and back and Heather took off atleast a couple of inches so it would match the rest of her head. The sides and back just got the dead ends taken off so hopefully the hair would grow faster. 

Kids....they grow too, too fast.  I can't believe she will be THREE in two months.

Cathedral Caverns

If you've never been to Cathedral Caverns, it's worth a visit! We went on Columbus Day and Ella loved it. The path is concrete with hand rails all the way through and it's a humid 60 degrees year round. It's a newer state park so everything is nice and updated.

New Beginnings

A lot of changes have been going on at work.  Our whole admin group and even engineers have had role changes, moves, and additions to their already full plate.  Months ago, I attended training for a new budgeting software being implemented by our government counterparts next door.  Jason mentioned to our boss that it sounded like something he'd like to do.  His wish was granted.  Almost a month ago, we learned we'd both be changing positions but it would be the same position.  We feel blessed because it's a promotion for both of us and overall great news for our family.  We moved into our new digs (giving up our offices for the cube life) and we're liking it so far.  The challenge has been the work since it's brand new to everyone and getting information entered has been all we've been doing.  But things are progressing and I think it's something we'll really both enjoy.  Maybe now I can dream about our next home purchase with a little more reality. :-)

The Ferris Wheel

I posted a few fair pictures in my last post (we went back in September).  But the ferris wheel deserved it's own post.  I was excited. I could cozy up to Jason and enjoy seeing my city from far up.  But, oh, it was too far up. And when was this designed? 1967? Okay...can we just drop out of the line.  Get a grip, Tina.  Kids under 10 are riding this (I told myself).  I suddenly realized two things 1) I don't like riding in metal buckets with no protection over my head and 2) If Jason sneezed (possibility of 80%), we could rock backwards and simply fall out.  Seventy-five feet up.  I kept my eyes closed most of the time. I did manage to take one picture from the top. I won't be getting back on a ferris wheel. Ever.

 Okay, so I left out the part about a 2009 renovation....

The view from the top. I'm surprised this wasn't blurry, with my hand shaking and all. The yellow, horizontal lines to the left was the "Banana Slide" and Ella cried when we had to leave because of this.  You sit on this potato sack-ish type fabric with your kid in your lap and hope you don't slide off. It went really fast, but it was fun.  Ella giggled all the way down.
